How do i put a field that only allows certain answers (text) to who is filling the formulary?

You'd want a form rather than a query. You can use a combo box with its Limit To List property set to Yes to only allow certain answers.

A form control with a default value of Date() will insert today's date.

Setting that control's Locked property will prevent it from being edited.
