It drives me crazy going from an environment I know (<= Access 2003) to an environment I don't know (Access 2007). Same problem with Excel.
ran across an excellent tool at the Microsoft Office site that interactively shows you how to do tasks in 2007 that you knew how to do in 2003.

To use, just click on the commands in the 2003 window that you would normally use and the tool will show you where to go in 2007 to achieve the same thing.
This got me through some simple stuff in Excel 2007 last night that I normally could do in 2003 with my eyes closed.
