I have linked a SP List and when I look at it in Design view, it shows different fields than when viewed in Datasheet view. Why?

SharePoint creates a number of fields in lists that are used only in SharePoint. You can, and should, ignore them in Access, for the most part. Don't try to change them. Some may have data of interest.

so, in particular, i'm trying to get to created date. i'm guessing I have to be in SharePoint to get to it - correct? I like links.

It should be exposed in Access when you link to the SP list. Access may hide it by default when you open the linked table in datasheet view, but you can use it in a query nonetheless and you should be able to unhide it as well.

it asks "do I want to save changes" when I simply unhid. I don't want to change anything (of significance) to the data structure. am I safe? will it hold my view?
