Is there an easy way (from within Outlook) to copy to a SharePoint list (ie Discussion board)?

Hmm, maybe. Have you tried creating a Rule to forward the email to SP?

I would need to be sure I could identify the particular email somehow. I'm thinking some script etc to have a drop-down which pulls from a SP list, identifying where to move it to.

Hi,

Not sure I follow... Are you saying people will send you email for the discussion, and you want to maintain their identity when the email is forwarded to SP? If so, did you want the "creator" of the post to reflect as the person who sent you the email? If so, you will probably need their login information and use code to impersonate them.

So many are stuck communicating via email. This makes it difficult to share and develop lessons learned. They might share more if they could simply click (a couple times) from within Outlook.

As far as " want to maintain their identity when the email is forwarded to SP" - that would be best. I would hope it would be apparent to the user that if they are doing the clicking from within Outlook, their identity would follow.

I don't want to impersonate anyone. I want to empower them.

Okay then, your previous question does not make sense based on what you just said. If each user will be forwarding their own email to SP, then their identity should follow the message in the discussion board (I would think).

Perhaps you could do a quick test with a couple of users to see what actually shows up in SP.

Sorry if I wasn't clear. So you know that a user can "forwarding their own email to SP,"? HOw is this done?

Yes, you can set up a List in SharePoint to accept entries via email. If you have Owner rights to the List, you can check the Settings page (I think under Advanced).
