What is the maximum number of fields you should have in a table?

While Access limits the number of fields in a table to 255, it is very rare to need this many columns in a properly normalized database. There is no set number that you "should" have in a table - that number is dictated by the data you will be storing and how the different bits of data relate to each other.
Here are a few great links on normalization, which is the process of splitting up your data and defining what tables you will need in a relational database. I strongly suggest you become familiar with the concept,
